  1. And the real beauty of these small dairies is that they can be even more profitable by making their own farmstead cheese!

  2. In the 50”s there was typically one or two dairies in each town that would produce milk for that town. There was a good profit margin since that locally produced milk could be sold for twice as much as milk exported to the Boston Market. Our VT Department of Agriculture promoted local processing through a system of inspection and licensing. Today the processing equipment is greatly improved, allowing a greater variety of quality dairy products to be produced at a lower cost. We only need our Vermont Department of Agriculture to once again take a leadership role in the production of fresh local dairy products.

Sorry to burst your bubble,but the small dairies of the fifties did not disappear because the neighbors did not like the small dairy and its product,so they went out of business,it died because people would not pay double the price that the farmer needed to stay afloat.You will need to change the attitude of the consumer to accept higher prices and get more customers beside the birkenstock wearing crowd ,which is not easy to do
